I must admit, I have a love affair with zucchini. I love zucchini zoodles, grilled zucchini with shrimp, raw zucchini on a turkey sandwich,  the list goes on and on. It is a great substitute for spaghetti and the benefits are endless. Here are some of the reasons why I added this green plant to my regular diet:
